Our Story

Where Tradition Meets Weekend Passion

Every great loaf starts with a story. Ours begins with a deep love for Irish baking heritage and a belief that these skills deserve to be shared, celebrated, and kept alive through hands-on learning.

How It All Began

The aroma of fresh bread baking in a wood-fired oven is one of life's most evocative experiences. It carries memories of generations past, of kitchens where bread wasn't just food but a daily ritual, a connection to the land and seasons.

We noticed something troubling—these traditional skills were fading. Fewer people knew how to cultivate a sourdough starter from scratch. The art of shaping dough by hand was becoming lost. Wood-fired baking was seen as something only professionals could do.

But we believed differently. We knew that with proper guidance, patience, and hands-on practice, anyone could learn these techniques. Not for professional reasons, not for certification, but simply for the joy of creating something beautiful and connecting with Irish heritage.

That belief became our weekend workshops. A space where curiosity is welcomed, mistakes are learning opportunities, and the satisfaction of pulling your own loaf from a wood-fired oven is available to everyone.

Our Purpose

To preserve and share traditional Irish breadmaking techniques through accessible, recreational workshops that prioritize learning for personal enjoyment rather than professional training. We believe these skills are part of cultural heritage that deserves to be experienced, not just read about.

Our Vision

A community of home bakers across Ireland who carry forward traditional techniques, adapting them to modern life while respecting their origins. We envision kitchens filled with the confidence that comes from understanding craft, and tables where handmade bread brings people together.

Our Approach

Hands-on learning in small groups where everyone gets individual attention. We teach the why behind techniques, not just the how. Our workshops are designed for real home kitchens, using accessible methods and tools. No pressure, no tests, just pure exploration of craft.

The Principles That Guide Our Workshops

01

Craft Over Certification

We don't offer professional certifications because that's not what we're about. Our workshops exist purely for the joy of learning and the satisfaction of creating. We measure success by the smile on your face when you taste bread you made with your own hands, not by certificates on walls.

02

Accessibility Without Compromise

Traditional techniques shouldn't require expensive equipment or professional setups. We teach methods that work in regular home kitchens while maintaining the integrity of the craft. You'll learn to achieve beautiful results with tools you already have or can easily obtain.

03

Heritage With Context

Every technique we teach comes with its story. Why did Irish bakers develop these particular methods? How did local ingredients and climate shape the craft? Understanding context makes the learning deeper and more meaningful, connecting you to the generations who perfected these skills.

04

Community and Sharing

Baking has always been a communal activity. Our workshops foster connections between participants who share curiosity and passion. We encourage questions, celebrate discoveries, and create an environment where everyone feels comfortable learning at their own pace.
